These flowers are at their peak for foraging after the green buds have opened but before any brown discoloration develops. Their heavy sweet scent has aromas of fresh hay and mild anise notes. Flavours on the palate are similar, but with a fruitier and slightly medicinal finish.
Edible Flowers contain vitamin C, flavenoids, rutin, and tannins important for immune health as well as antioxidant and anti-inflammatory purposes. They are best used in sweet applications. They are commonly dipped in batter and fried for flower fritters, but also make a delicious addition to muffins and pancakes.
