Blueberry Lemon Loaf is what everyone craves for! Delicious exotic loaf that you will always wants to have when satisfying your sweet tooth.
Cooking Steps
1. Take a bowl and add 125 Gm Fresh Blueberries with 1 tbsp flour in it and mix it throughly.
2. In another bowl, add 2 eggs, 100 Gm Greek Yogurt, 3 tbsp Lemon Juice, 1 cup Coconut Oil, 1 cup Coconut sugar, 2 Cup flour and 1 tbsp Baking Powder with 1/2 tbsp salt and flour coated Blueberries and mix it thoroughly.
3. Transfer the batter into the baking container with baking paper at bottom. Bake it at 180 degree celcius for 45 mins.
4. Make delicious Cream Cheese Frosting by adding 100 Gm Butter, Cream Cheese and Castor Sugar each with Blueberry Syrup for beautiful blue colour and mix it with a hand blender.
5. Spread the frosting on the top of the loaf and decorate it with some Fresh Blueberries and nuts (optional).
