Bravocado Recipes - Part Two!!

So the previous blog was just not enough. Avocado as a superfood is quite versatile. From Pancakes to Ice Creams, from Toasts to Tacos this super fruit will make you fall in love with all your heart (and appetite too). This is in continuation of the previous blog - We have more luscious Bravocado recipes just for you!

I) Avocado Salsa Breakfast Tacos

Make these healthy green breakfast tacos to make your mornings deliciously divine. They are filled with some of the basic and healthy ingredients which gives you one more reason to try it.


1) Fresh Spinach (5 cups)

2) Eggs (3 large)

3) Olive Oil (just for brushing)

4) Salt

5) Ground Black Pepper

6) Tortillas (charred or warmed)

7) Microgreens

8) Green Chili (1 sliced extra-large, optional)

9) Lime Wedges (for serving)


a) Brush your non-stick pan with olive oil and bring it to medium heat.

b) Add the spinach with salt and pepper and sauté until spinach is wilted.

c) Brush another pan and bring it to medium heat. Add the eggs and scramble the eggs until just set.

d) Assemble your taco with scrambled eggs, avocado slices, spinach with mouth-watering salsa sauce.

e) Top it up with your favourite microgreens and sliced green chilis and serve with lime wedges.


II) Avocado Basil Pasta

Easiest and most unbelievably creamy avocado pasta on your table in just 20 mins! 


1) Spaghetti (12 ounces)

2) Avocados (2 perfectly ripe)

3) Basil Leaves (½ cup)

4) Garlic (2 cloves)

5) Lemon juice (freshly squeezed)

6) Salt and Black Pepper (as per taste)

7) Olive oil (1/3 cup)

8) Cherry tomatoes (1 cup, halved)

9) Corns (rinsed and drained)


a) In a large pot of boiling salted water, cook pasta according to package instructions; drain well.

b) To make the avocado sauce, add avocados, basil, garlic and lemon juice in a food processor; season with salt and pepper. With the motor running, add olive oil in a slow stream until emulsified.

c) In a large bowl, add pasta, avocado sauce, cherry tomatoes and corn.

d) Serve hot.


III) Avocado, Prawn & Fennel Cocktails

   For Dressing

1) Olive Oil (4 tbsp)

2) Orange Valencia (segmented and also the juice from the trimmings)

3) Lemon Juice

   For Salad

1) Fennel Bulb (1 trimmed, halved and finely sliced)

2) Avocado (quartered, peeled and sliced)

3) Prawns (200 gm cooked)

4) Spring Onions (sliced)

5) Rocket Leaves (55 gm)


a) Make the tempting dressing by mixing the olive oil with orange and lemon juice together in a small bowl with some salt and pepper.

b) In a bowl, toss all the other ingredients, except the rocket, together with the orange segments and half of the dressing. Scatter the rocket leaves into 4 Martini glasses or small bowls, pile the salad into the centre, then drizzle with the remaining dressing just before serving.
