CMC or Carboxymethyl Cellulose is a food additive commonly used as thickening, emulsifying and preserving agent. Most frequently used in Ice-creams to increase the shelf life. CMC is responsible for the smooth texture of ice-creams. Use CMC to create beautiful and tasty bakery products like cakes, biscuits, etc. It adds body and improves the taste and quality of the food product. Also used in Candies, chewing gums, peanut butter as an emulsifier.
For use mix the powder with a small quantity of water and then add this mixture to the main recipe. Store in air-tight containers in cold and dry place for better shelf life.
